Vegan Caesar Salad Dressing

Like caesar salad but not its calories (approx. 80 calories in one tablespoon)

Maybe you might enjoy this simple dairy-free, vegan, versatile caesar-like salad dressing ~35 calories per tablespoon. All natural and good fats.

I love it on salads or as a dairy-free substitute for sour cream. Give it a try and let me know how you like it!

INGREDIENTS (makes ~170mL):

  • 1 cup raw unsalted cashews
  • 1/2 cup filtered water
  • 1/4 cup lemon juice
  • 1 tablespoon fresh peeled garlic (roughly chopped)
  • optional: salt to taste

METHOD:

1 . Add all ingredients into a blender and blend until smooth. You can add a bit more water to your desired consistency (if necessary). I don’t typically add salt to this, but to those who prefer, you can add salt to taste.

2. Store in the fridge, covered or up to 3 – 5 days.
