Personally, pork shoulder tastes better! But sometimes I switch it up!<\/p>\n\n\n\n<p>INGREDIENTS:\u2063<\/p><p>&#8211; 200g green split peas\u2063, rinsed<br \/>&#8211; 2 celery stalks, diced\u2063<br \/>&#8211; 1 carrot, small cubes\u2063<br \/>&#8211; 1 onion, diced\u2063<br \/>&#8211; 4 garlic cloves\u2063<br \/>&#8211; 2 bay leaves\u2063<br \/>&#8211; 2 litre water\u2063<br \/>&#8211; 200g pork shoulder or pork hocks<br \/>&#8211; 1\/2 tbsp organic ghee\u2063<br \/>&#8211; 1\/2 tsp avocado oil<br \/>&#8211; 1\/4 tsp salt<br \/>&#8211; salt to taste<\/p>\u2063<p><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><br \/>METHOD:\u2063<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1. Lightly glaze fry pan with avocado oil over medium high heat. Sear pork on all sides until.golden brown.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2. Transfer seared pork into a pot of boiling water. Blanch the pork until clean (no scum). Rinse. \u2063Set aside.<br \/>\u2063<br \/>2. Glaze pot with organic ghee over medium high heat.\u2063<br \/>\u2063<br \/>3. Add onions, celery, carrots and 1\/4 tsp salt. Sweat the onions. Do not brown.\u2063<br \/>\u2063<br \/>4. Add water, split peas, bay leaves, blanched pork and garlic cloves. Bring to a boil then simmer covered for 45 mins.\u2063 *if using pork hocks, simmer for an additional 1 to 1.5 hrs in order for collagen to dissolve.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">5. Stir occasionally to avoid sticking to the bottom of pot. Add more water if required. <br \/>\u2063<br \/>6. Remove pork and cut into small pieces.\u2063<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">7. Simmer for another 20 mins. Add salt to taste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">8. Ready to serve.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">TIME SAVING TIPS:<br \/>&#8211; Typically once the soup is ready, I let it cool, and freeze them in 400g portions in small zip lock bags.
