My mother-in-law made this salad side dish  once, and it was so good, I had to jot down her recipe and make it again.  Its not a salad to be eaten alone. <\/p>\n\n\n\n<p>Super simple to make!<\/p>\n\n\n\n<p>Pairs well with Japanese dishes that include sushi, sashimi, <a href=\"https:\/\/www.sensitiveskinlifestyle.com\/blog\/easy-shrimp-kabocha-tempura-recipe\/\" data-type=\"URL\" data-id=\"https:\/\/www.sensitiveskinlifestyle.com\/blog\/easy-shrimp-kabocha-tempura-recipe\/\" target=\"_blank\" rel=\"noreferrer noopener\">tempura<\/a>, miso soup, tofu, edamame etc.<br><br><strong>INGREDIENTS:<\/strong><br>(makes ~2 to 3 servings)<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>500g daikon radish<\/li><li>60g deli ham of your choice*<\/li><li>2.5 tbsp low fat mayonnaise, I use <a rel=\"noreferrer noopener\" href=\"https:\/\/www.bestfoods.com\/us\/en\/products\/mayonnaise.html\" data-type=\"URL\" data-id=\"https:\/\/www.bestfoods.com\/us\/en\/products\/mayonnaise.html\" target=\"_blank\">this<\/a><\/li><li>1.5 tsp lemon juice, I use <a rel=\"noreferrer noopener\" href=\"https:\/\/amzn.to\/3sejmFd\" target=\"_blank\">this organic one<\/a><\/li><li>1 tsp sugar<\/li><li>1 tsp fine salt<\/li><li>optional: 1\/8 tsp dried parsley flakes<\/li><\/ul>\n\n\n\n<p><em>*Consider low salt or natural options as deli meats can be very salty. <\/em><br><em>Can substitute with thinly sliced turkey or chicken deli meats<\/em>. <br><em>For better taste, I recommend getting it freshly sliced at the deli section of your local supermarket!<\/em> <\/p>\n\n\n\n<p><strong>METHOD:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Wash, peel and cut daikon radish into strips. Roughly 1 inch long x 1\/4 inch x 1\/4 inch.<\/li><li>Place daikon strips in a large bowl.<\/li><li>Sprinkle fine salt all over. Mix well and ensure salt is evenly distributed. <em>This is to drain the water out of the daikon.<\/em><\/li><li>Let daikon radish sit for 30 mins.<\/li><li>After 15 mins, place two layers of paper towels or cheese cloth on a large sieve.<\/li><li>Place the daikon strips on the paper towel. Squeeze the daikon strips until it&#8217;s juices are out. <\/li><li>Transfer the daikon strips into salad bowl.<\/li><li>In a small dish, mix mayonnaise, sugar and lemon juice.<\/li><li>Add the mayo mixture onto the daikon strips. Mix well.<\/li><li>Slice deli ham into approximately 1 x half inch slices.<\/li><li>Add ham slices into the daikon. Mix well.<\/li><li>Ready to serve!<\/li><\/ol>\n\n\n\n<p>Today, I paired this side dish with the frozen tempura I made a few months back.
