Gluten-free Vegan Pancakes with Maple Apple Sauce

Hi again!

Lot’s of hype around Cassava flour lately, prominently known as a gluten-free and grain-free flour alternative that is rich in Vitamin C. This pancake recipe is also gluten-free, dairy-free, egg-free, oat-free, grain-free, banana-free & nut-free!

Cassava flour, also known as Yuka flour, has a japanese mochi-like chewy characteristic to it. So the pancakes are on the chewier side, which I personally enjoy. This texture, pairs very well with apple-pie filling.

Please note that cassava flour is DIFFERENT from tapioca starch. Cassava flour is made from the actual root itself whereas tapioca starch is made from the starch extracted from the root. So ensure that the ingredients only contain cassava only.

CASSAVA PANCAKES WITH APPLE SAUCE RECIPE (~1 serving, makes 4 pancakes)

Pancake Ingredients

  • 1/2 cup cassava flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp kosher salt
  • 1/2 cup non-dairy milk (I used cashew milk)
  • 1/4 cup filtered water
  • 1 tbsp maple syrup
  • 1 tbsp white distilled vinegar (or apple cider vinegar)
  • 1 tbsp avocado oil
  • 1 tbsp avocado oil (for cooking)

Apple Sauce Ingredients:

  • 1 medium sized apple cut into mini cubes (~1/4 inch cubes)
  • 2 tbsp filtered water
  • 1 tsp maple syrup
  • 1/4 tsp cinnamon powder
  • 1/4 tsp nutmeg
  • 2 tbsp filtered water
  • 2 tsp avocado oil

  1. In a cup, add non-dairy milk and vinegar and mix. Set aside.
  2. In a medium bowl, add cassava flour, baking powder, baking soda, kosher salt. Mix.
  3. Add the non-dairy milk-vinegar mixture, maple syrup, 1 tbsp avocado oil into the dry mixture. Mix evenly until a pancake-like consistency. Don’t over mix.
  4. If your batter is too thick, add in 1 tbsp of filtered water at a time until you achieve that consistency. I used cashew milk and added another 4 tbsp (1/4 cup) of water.
    (Batter tends to thicken as it absorbs the non-dairy milk)
  5. Let the batter rest for 5 mins.
  6. Heat oil on non-stick pan (medium-high heat) for 2 mins or until hot.
  7. Pour 1/4 cup of the batter into the pre-heated pan. Adjust heat source to medium.
  8. Cook until the bottom edges look dry and the bottom is a nice light golden brown. Then flip to the other side. Repeat steps 7 – 9 until all pancakes done.
  9. In a small fry pan, add 1 tsp avocado oil on medium heat.
  10. Add apples, cinnamon, nutmeg, kosher salt and maple syrup.
  11. Cover the pan. Stir occasionally. Cooked until the apple softens.
  12. Add water 1 tbsp at a time to deglaze the pan.
  13. The apple sauce should be ready when they soften and the syrup thickens.
  14. Place cassava pancakes on a serving dish. Drizzle with 1/2 tbsp of maple syrup and home made apple sauce. Ready to eat!
